You know, being poor teaches you to take pleasure in the simple things. When you can’t afford certain things, you consider some things a great treat that others would take for granted. The B.L.E. used to be that way for me. Bacon was a luxury item for a while, so these sandwiches were really special. Now I can afford good food, but this sandwich still reminds me of the simple pleasures in life, and makes me remember how much I have to be grateful for.
So what’s a B.L.E.? It’s simple: Bacon, lettuce and egg. That’s all there is to it. It’s delicious though. I remember when it was a lot more work because I didn’t like frying things on the stove. I’ve found shortcuts now, and it’s a whole lot easier.
I take 3 slices of thick-cut smoked bacon and put them on a paper towel on top of a paper plate. Pop it in the microwave and cook for 1 minute. Flip, then another minute. I keep doing that until it’s just chewy. I personally don’t like crunchy bacon. Once I have the bacon right, I wrap it in a paper towel to soak the grease off and set it aside.
Next I take a ceramic cereal bowl and use the back of a spoon to smear some margarine in the bottom and around the sides. Crack in a jumbo egg. Use the edge of the shell to pop the yolk and break the membrane in the white a bit. I learned the hard way they if you don’t break the yolk it explodes. Next I grind on a bunch of black pepper. Then put a paper towel over the top of the bowl and put it in the microwave. Tuck the corners of the towel under the bowl. Put it on for 50 seconds. (I’m using an 1100 watt microwave for all of this.)
Get out 2 slices of your favorite bread and put on plenty of lettuce. Cut the slices of bacon in half and arrange them on the bread. The egg should slide right out of the bowl and onto your sandwich. Put the pieces together and enjoy!
Sometimes I add a slice of cheese to this. Sometimes I’ll even put it all on a toasted English muffin. Once in a while I put sriracha in the egg. You can mix it up any way you like. Usually I just do the basic way. It’s so simple and amazing. And oddly, I rarely eat these for first meal, I usually eat them at night when I need a pick-me-up. Who can possibly be unhappy while eating bacon?!
