I’ve mentioned before that Eric and I have switched from eating frozen, canned and other prepared foods to making the vast majority of our foods from scratch. One of the challenges of that is the fact that we actually liked the taste of some of those foods that we used to eat. Luckily, it is possible to replicate a lot of meals at home.
The one pictured here is Southwest Chicken. We used to buy this as a bagged meal, I forget which brand. Unfortunately, they stopped using real meat and were using packed, processed meat. it also had a ton of fat and sodium. it tasted good until they put the lousy chicken in it. We decided that we just needed to make our own.
Honestly, I think ours is better than the bagged stuff. Eric made this last night and it was amazing. It’s a lot of work, but everything is fresh and we can control the amount of fat and salt that goes into it, and we can pronounce all the ingredients. This has grilled chicken, farfalle, real cheeses, poblano and chili peppers, corn right off the cob, fresh green beans and real black beans. it tastes amazing.
We’ve been working to replicate our favorite frozen meals at home. it takes more work, but it is so worth it to have real, fresh food and we know everything that goes into it. Plus, homemade is usually better than the frozen once you work out the recipe. I’m still trying to figure out how we can replicate the Shrimp and asparagus penne that I loved so much. I still can’t master the sauce, but I’m sure one of us will figure it out.
I highly recommend for people to learn how to make meals like this at home. it’s so much healthier than buying frozen food, and if you shop smart, it actually costs less. When we really got into buying and making all fresh food we were (and still are) spending about $100 less per month on groceries than we were when all we bought came from the freezer section or in a can.
