Okay, so this is sort of fluff, and sort of not. Some people hate food posts, but they can be cool. I share the awesome stuff that we make not just to have something to post, but to inspire people to cook at home and to eat better. Home cooked meals can be awesome! granted, you have to learn to be a good cook, but anyone can do that if they want to. And cooking your own food is so much healthier! We have been feeling and looking a lot better since we quit buying frozen, boxed and canned food and started eating all fresh foods.

Anyway, here is some of our more recent awesomeness:

Chicken cacciatore. We’d made this before, but it wasn’t quite right. This time, it was awesome! AND! I got to have mushrooms in it! I used to be allergic to mushrooms, but I’m not anymore, which totally rocks, because they’re super yummy.

From scratch macaroni and cheese with habanero peppers. There are several kinds of cheese in here, and it is the best mac & cheese I’ve ever had.

Pesto lasagne. The pesto came from a friend and we love using it. This was the best one I’ve ever made, and everyone loved it. Three cheeses, sauce, pesto, beef, delicious!

This is one of my favorite lunches, pan seared asparagus with red quinoa. I put garlic, scallion and all sorts of yummy stuff in the quinoa.

Shrimp salad with chili peppers and broccoli. It has a nice kick and veggie goodness. This stuff is absolutely, amazingly good.

I used to make goulash with ground beef, canned peas and canned sauce. This is the healthy new version made with grilled beef, fresh peas, fresh crushed tomatoes and other awesome goodness.

It’s kind of odd that these recent photos are of a lot of beef meals, but really, we only eat beef once a week. This is a grilled steak with sauteed mushrooms and onions. The green beans were pan-seared with butter and spices.

Steak rolls. I just got a weird thought and came up with these out of thin air. They didn’t roll as nicely as I’d like, but they were to-die-for tasty. It’s steak filled with mozzarella, herbs, spinach and Roma tomatoes basted with a roasted tomato vinaigrette.
